Solicit\u0103rile \u00een acest sens sunt din partea unui produc\u0103tor specializat \u00een ob\u021binerea produselor tradi\u021bionale din carne, de tip crud \u2013 uscat (Codrul Boieresc). \u00cen baza parteneriatului cu USV Ia\u0219i, ace\u0219tia au solicitat verificarea re\u021betelor de c\u00e2rna\u021bi cu carne de muflon \u0219i a pastramei provenite de la animalul c\u0103ruia i se mai spune \u0219i oaia s\u0103lbatic\u0103.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">\u201eDintr-o lips\u0103 acut\u0103 a materiei prime din carne, \u00een special carnea de porc, din ce \u00een ce mai mul\u021bi procesatori care doresc produse de o \u00eenalt\u0103 calitate \u00eencearc\u0103 noi materii prime provenite din zona cinegetic\u0103, iar \u00eentre speciile din fauna rom\u00e2neasc\u0103, carnea de muflon este preferat\u0103 datorit\u0103 calit\u0103\u021bii nutritive, av\u00e2nd un con\u021binut ridicat \u00een aminoacizi esen\u021biali. \u00cen laboratorul de control \u0219i expertiz\u0103 carne \u0219i a produselor din carne, \u00een cadrul proiectului de cercetare pe care-l avem \u00eencheiat cu partenerii no\u0219tri de la Codrul Boieresc, test\u0103m produsele acestora pentru a reg\u0103si elemente de caracterizare a structurii nutritive, a gradului de prospe\u021bime \u0219i a termenelor de valabilitate\u201d, a declarat \u0219ef lucr. dr. Marius Ciobanu, din cadrul Departamentului de tehnologii alimentare, Facultatea de Agricultur\u0103 a USV Ia\u0219i.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Printre produsele din carne pentru care s-au mai realizat test\u0103ri la USV Ia\u0219i, \u00een vederea caracteriz\u0103rii calit\u0103\u021bii nutritive \u0219i optimiz\u0103rilor tehnologice, mai amintim mortadella cu fistic, prosciutto cotto, lebber austriac \u0219i c\u00e2rna\u021bii sticks crud usca\u021bi cu v\u00e2nat.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">\u201eProdusele noastre, at\u00e2t cu specific rom\u00e2nesc c\u00e2t \u0219i italienesc sunt preparate dup\u0103 re\u021bete autentice, mare parte din materia prim\u0103 provenind direct de la fermele noastre unde animalele au parte de hran\u0103 natural\u0103 f\u0103r\u0103 adaosuri de aditivi furajeri.
